i have been eating a plantbased diet for the last 7 years and only today decided to add eggs to my diet. This has been a funny desicion to make but after eating them and feeling really good in my stomach and digestive tract i am going to let this be the first ever recipe on my new blog :)
Eggs are totally free from salicylates, which is why i chose them. The last few days i had a lot of reactions to foods i didn't even know contained salicylates. Now i feel like i have something i can have as a save breakfast, covering all diets, the SIBO biphasic diet, the low fodmap diet and no salicylates....WIN,WIN :)
2 medium eggs
a handful of Rocket
5 organic, preservative free dark olives ( green olives are high in salicylates)
salt to taste
Whisk the eggs in a bowl, add olives and Rocket leafs and put it all in a pan. I added no oils to not add more salicylates. This meant i had to scrape a bit more as it all sticks to the pan easier, but it's worth it!
add salt to taste and voila, yummy, gut friendly breakfast for even the most sensitive guts there are :)
