These Pancakes have been a real life line for me! After finishing the elemental diet to treat SIBO and Leaky Gut a few weeks ago, i struggled with the biphasic diet and reintroduction phase. Also having salicylate intolerance means that my list of allowed foods is even smaller than the already very restricted biphasic diet. I lost a lot of weight, and being already slim, this was getting really hard on me. My doctor then told me that i could have buckwheat and make pancakes with it. Well, that was all i needed to hear :) off i went, bought organic buckwheat....and the rest is a love story!! i cannot get enough of my breakfast since then and my mood has shifted a 100 degrees as well as my energy levels!
If you are at the end of the biphasic diet phase 1 and feeling good, this pancake recipe is for you! If you have salicylate intolerance as well, this is one amazing breakfast that won't cause symptoms :)
I hope you enjoy it as much as i do...and without further ado, here is the recipe:
2-3 tablespoons organic buckwheat flour
100gr. unripe banana
enough water to make the mix quite runny
(if you don't need to watch your salicylate intake you can use almond or oat milk instead of water)
1/2 teaspoon aluminium free bicarb soda powder (optional to make them extra fluffy and thick)
1 teaspoon Carob
2 tablespoons of Maple Syrup
Mix buckwheat flour and baking soda (if using soda) , then add the egg. Mix both together with a fork until there is no more little lumps and bumps, then add the water.
Cut the banana in small pieces. In the meantime, heat your pan on the stove on medium heat, adding a little bit of sunflower oil.
Add the pancake mixture, then lay the banana pieces on top while the mixture is still wet. Flip half the pancake over the other, let it sit for another minute and serve onto a plate.
simply mix the carob powder with the maple syrup, drizzle over the pancake....and ENJOY :)
